Peach Compote

3 cups peeled, chopped peaches, divided
½ cup firmly packed light brown sugar
1/3 cup water
2 tablespoons honey
1 teaspoon vanilla extract 1/8 teaspoon ground cinnamon

In a medium saucepan, combine 2 cups peaches and remaining ingredients. Cook over medium-high heat, stirring occasionally, for 20 minutes, or until thick. Remove from heat and stir and remaining 1 cup peaches. Serve hot.
