Peach Crisp
4 cups peaches, peeled, pitted, and sliced
1 ½ cups light brown sugar, divided
1 teaspoon orange juice
1 teaspoon vanilla extract
1/8 teaspoon ground ginger
1/8 teaspoon ground cinnamon
1 cup self-rising flour
1 egg
½ cup unsalted butter, melted
-Preheat oven to 375. Coat a 9-x-9-inch casserole dish with cooking spray; set aside.
-In a large bowl, combine peaches, ½ cup brown sugar, orange juice, vanilla, ginger, and cinnamon. Spoon peach mixture into prepared dish.
-In a medium bowl, combine remaining 1 cup brown sugar, flour, and egg. Crumble evenly over peaches. Pour butter over topping. Do not stir.
-Bake for 30 to 35 minutes, or until topping is golden brown.
