Peach Mango Salsa
1 large peach, peeled, cored, and diced
1 mango, peeled, pitted, and diced
1 large red bell pepper, diced
1 green onion chopped
¼ cup finely diced red onion
2 tablespoons light brown sugar
2 tablespoons finely chopped fresh cilantro
1 tablespoon rice vinegar
1 teaspoon finely chopped garlic
1 teaspoon finely chopped shallot
¼ teaspoon salt
In a large bowl, combine all ingredients. Cover, and chill for 1 to 2 hours.
